This easy Pork and Nduja ragu recipe makes the most delicious rich ragu for pasta. I wrote this ragu recipe for New Zealand winery Trinity Hill to pair with their Thomson's Block 2019 Syrah. It will pair beautifully with any pasta of your choice, I chose my hand rolled pici pasta. Give this pork and nduja ragu a try, it is the perfect meal to make for friends.

Tips for making Pork and Nduja Ragu
- My biggest tip when making any slow cooked pasta sauce is to make it the day before if you can. The flavour improves plus if you are making it for a dinner party all the work is done the day before.
- Nduja is an Italian spreadable sausage which has a little chilli kick. It is usually in a jar and can be found at most specialty food store. If you can't it you could substitute with some chorizo. Check out my Nduja Mac n Cheese recipe!
- Lemon zest is one of my favourite things to finish any pasta dish. In particular on a meat dish because it brings the flavours out and adds a little burst of freshness.

What pasta shape will work the best?
Honestly, anything! You could make a simple pappardelle or spaghetti or try a hand rolled shape like my hand rolled pici pasta, the thick strands stand up to the rich sauce perfectly. It would also work with my gnocchi sardi or homemade orecchiette.
